Welcome back to Sunday Meal Prep! Today we are recreating a takeaway favourite, General Tso chicken, but making it plant-based and super nourishing. This dish is packed with flavour and texture, making it a great option to spice up your meal prep options.

Ingredients
4 servings
600gtofu
diced in cubes
1 headbroccoli
diced
2carrot
diced
1capsicum
diced
0.5lime juice
1 Tbspsesame seeds
2 cupsbrown rice
cooked
1 Tbspsesame oil
4cloves garlic
minced
2 Tbspginger minced
1 tspchilli flakes
Sauce
Instructions
Step 1
Bake the tofu in the air fryer at 350 degrees F (180 C) for 15 minutes (or 20 minutes at 400 degrees F/200 C in the oven).
Step 2
Stir fry the broccoli, capsicum and carrots for 5 minutes, using water to deglaze if needed. Remove from the pan. squeeze half a lime.
Step 3
Combine the tamari, hoisin, vegetable stock, rice vinegar and maple syrup.
Step 4
Combine the tapioca starch and water to make a slurry.
Step 5
To a pan on medium heat, add the sesame oil, garlic, ginger and chilli flakes. Cook for a couple of minutes until fragrant.
Step 6
Add the tofu, sauce and slurry. Cook until it starts to thicken.
Step 7
Serve with rice, the stir-fried veggies, and sesame seeds, and enjoy!
