Avocado Salsa

1avocado

2 tablespoonsolive oil

salt

coriander

2 tablespoonslemon juice

2cubes ice

1 tablespoonswater
Salad

1can of chickpeas

2 pinchessalt

250gtomatoes cherry

1avocado
small

3radishes

2 tablespoonsolive oil

4 sprigsoregano

Instructions
Salad
Step 1
Boil the chickpeas for 5 mins, enough for them to soften a little with 1 pinch of salt. Drain the water and let them cool.
Step 2
Chop all the veg, mix with the olive oil, salt and fresh oregano.
Step 3
Mix all together once the chickpeas are cold.
Avocado Salsa
Step 4
Put all the ingredients in a blender and blend until smooth.
Lemon Feta
Step 5
Mix all the ingredients in a bowl until smooth.
Finishing Touches
Step 6
Put the salad in a plate, drizzle over the salsa. Add the feta on top and a few leaves of fresh oregano.
