Instructions
Step 1
Preheat oven 350 degrees.
Step 2
Bone chicken also shred chicken into small pieces, if you don’t have roast chicken you can using 3-4 cooked chicken breasts.
Step 3
In skillet, Blend in chicken, cream cheese cubes, sour cream, chiles, chop onion, seasonings & 3/4 c cheddar cheese Heat to cheeses are melted.
Step 4
Spray baking dish with cook spray. Spoon a TBS of chicken mix over the tortilla, roll it up, & placing it in pan seam side down.
Step 5
Repeat til all the filling is used. Pour the enchilada sauce over the rolled tortillas.
Step 6
Sprinkle rest cheese on enchiladas and bake at 350 uncovered for 20-25 min.
