640gBread Flour
3.5gSalt
9gDry yeast
110gsugar
375gWhole Milk
52gEgg
medium egg
5gGround Cinnamon
2.5gAll Spice
2.5gNutmeg
1 Tbsplemon zest
3 Tbsporange zest
210gRaisins
50gunsalted butter

Glaze
Instructions
Step 1

In a mixing bowl, mix all the dough ingredients except butter, until no dry flour clumps are visible. (Low speed 4 minutes in a Spiral/ Planetary mixer)
Bread Flour640g
Salt3.5g
Dry yeast9g
Ground Cinnamon5g
Step 2

Switch to high speed mixing to develop gluten, until dough appear smooth. (High speed 4 minutes in a Spiral/ Planetary mixer)
Step 3

Add and mix softened unsalted butter into the dough. Low speed 4 minutes in a Spiral/ Planetary mixer)
Step 4

Mix till smooth, then add raisins
Step 5

Proof, for 30 minutes, then flip out onto a table
Step 6

Divide into 12 equal pieces, and shape into ball
Step 7

Place neatly on a sheet tray to proof
Step 8

Combine water and flour, put into piping bag, and pipe onto the proofed buns
Step 9

Bake for 22 minutes, or until adequately brown
Step 10

Glaze with diluted jam
Step 11
