Step 1
Make the hash browns according to package directions.
Step 2
Heat a large skillet over medium heat. Add the oil. Sautee the broccoli and brussels sprouts, tossing occasionally until they are soft and tender, but not mushy, then set aside
Step 3
Slice/mash your avocado.
Step 4
Add the sliced/mashed avocado on top of the hash browns, then top with sauteed brussels sprouts and broccoli.
Step 5
Sprinkle, to taste, everything bagel seasoning and vegan parmesan cheese over top.
Step 6
Garnish with fresh microgreens.
