Instructions
Step 1
pre heat the oven to 180 degrees / gas mark 4
Step 2
chop the tomatoes in half and put in a large roasting tray
Step 3
roughly chop the onion and celery then add this to the dish too
Step 4
add the oil, salt, pepper and oregano and mix well
Step 5
slice the top off the whole garlic bulb, leaving the structure in tact with an opening to each bulb. Place this in the roasting tray
Step 6
roast for 35 minutes
Step 7
let cool for 10 minutes and prepare the grilled cheese sandwich
Step 8
fry the sourdough cheese sandwich in a non stick frying pan over medium heat until the cheese has melted and the bread is golden brown
Step 9
the garlic bulb should now be cool enough to handle, squeeze the now roasted garlic out of the bulb and discard the shell
Step 10
blitz or blend the soup, this will keep in the fridge for 5 days
Step 11
serve and dip the grilled cheese in!
