3 cupsgreen cabbage
shredded
3 cupspurple cabbage
shredded
1 cupmatchstick carrots
or shredded carrots
1bell pepper
red, yellow, or orange
⅓ cupgreen onion
diced
⅓ cupfresh cilantro
chopped
½ cupsliced almonds
3 Tbspolive oil
or avocado oil
1 Tbspsesame oil
¼ cupapple cider vinegar
¼ cupcoconut aminos
1 Tbsplime juice
⅓ cupnut butter
1clove garlic
minced
1 Tbspfresh ginger
chopped
Instructions
Step 1
In a large bowl, toss the shredded cabbage, carrots, green onion, and cilantro. Dice the bell pepper into small pieces or slice into strips. Toss in with the rest of the veggies.
Step 2
Now make the dressing: in a food processor or blender, pulse all of the dressing ingredients until smooth.
Step 3
Pour dressing over the veggies and toss to coat. Sprinkle with sliced almonds and salt to taste. Serve!

NOTES:
3 cups of shredded cabbage will be about 1/2 of a small head of cabbage

Use peanut butter (not Whole30 compatible), almond butter, or cashew butter.
