Instructions
Step 1
In a bowl, crack 5 eggs and remove 3 yolks. Whisk together with salt and pepper, a dash of hot sauce and/or herbs de Provence and coconut milk.
Step 2
In a cask iron skillet on med high heat, add olive oil and clarified butter. Sautée onions until soft and add spinach. Cook until just wilted. Pour in egg mixture.
Step 3
Cook for 2 minutes - until the edges begin to set and the mixture has warmed. Put it in the oven for 7-9 minutes.
Step 4
Remove from the oven and let stand for 1 minute, while you plate smoked salmon.
Step 5
Garnish with lemon, chopped chives and fresh dill.
