Instructions
Step 1
Use a flexible spatula to scoop 1/2 cup natural peanut butter, then 1/2 cup of traditional peanut butter, then place in the mixing bowl of a stand mixer or Kitchen-Aid. Beat on low to combine, then on medium until they make an even consistency.
Step 2
Pour 1/2 cup of molasses into the bowl, beat until combined. Add egg and vanilla. Beat again.
Step 3
In a small bowl, combine flour, baking soda and salt. Add to mixer and blend on low until combined.
Step 4
Put 2 cups oats into a blender or food processor and blitz for a few seconds until it becomes a flour. Pour oatmeal flour to mixer and blend on low to combine. This will be a stiff dough, so you may need to stir it by hand. Add in 1/2 cup chocolate chips.
Step 5
Spread in a 8x8 pan, lined with parchment. Sprinkle the remaining 1/2 cup of chocolate chips over the top. Bake at 350 for 20 min.
