Instructions
Step 1
Blend Chili’s & garlic together in a blender until everything is evenly chopped.
Step 2
Add brown vinegar, brown sugar and salt.
Step 3
Add Green Pepper and blend until peppers are evenly chopped.
Step 4
Add Onion and blend to even consistency. Use the pulse function to prevent over blending or turning into a porridge.
Step 5
Transfer to a heavy based pot or any pot with good heat retention and even heat distribution. Heat ingredients stirring slowly but continuously until the relish has heated through and is nice and hot to the touch. Cook for a few minutes longer but DO NOT BOIL or your ingredients will go brown. Remove the pot from the heat, stir the relish in a folding over action scraping from the bottom of the pot folding over to the top. This is basically to stop the bottom half of the mixture from overcooking. Once the base of the pot has cooled down a little you can set the pot aside with the lid off for the contents to infuse.
Step 6
When the relish has cooled completely and is cold to the touch, place into sterilized jars and store in the fridge. Can last up to 6 months if you let it ;-)
