Chicken Satay

Instructions

Step 1
Peel and grate the ginger and garlic into a bowl add the lime zest.
Step 2
Add the Lime juice, honey, soy, curry powder and peanut butter and give it a good mix.
Step 3
Spoon 2/3 of the mixture into a small pan and set aside for later.
Step 4
Cut the chicken into strips and mix it with the remaining peanut butter mix cover and leave until required (this can be done up to 3 hours ahead).
Step 5
Pour the coconut milk into the pan and mix with the peanut mixture
Step 6
Heat gently.
Step 7
Thread the chicken onto skewers.
Step 8
Heat the grill to high and grill the skewers for about 10mins. Serve with the heated sauce.
