Creamy Garlic Chicken & Mushroom Pasta

Tender chicken pieces sautéd in garlic and shallot oil with finely sliced mushroom and minced leek. Simmered in a rich creamy sauce with tender baby spinach and chives before being served with pasta noodles.

Prep Time!
Step 1
Finely slice mushrooms, leek, garlic and shallots. Set aside.
Step 2
Butterfly and slice the chicken breast into bite size pieces. Season with salt, black pepper and smoked paprika. Set aside.
Cook the Pasta!
Step 3
Set the pasta in a pot, salt the water with 2 pinches of rock salt and leave to simmer for 10-15 minutes (or until tender).
Step 4
Drain the pasta, reserving 1 cup of pasta water. Set aside.
Cook the Sauce!
Step 5
Add the chopped garlic and shallot to a COLD frying pan and set to medium (3) heat. Cook until the oil is infused and the garlic is just starting to turn golden.
Step 6
Remove the garlic and shallot from the pan, leaving the oil behind. Set aside to be added later.
Step 7
Turn the heat to mid-high (5) and add the chicken. Part-cook the chicken pieces then remove from the pan temporarily.
Step 8
Add the sliced mushrooms to the pan along with another tbs of oil if needed. When the mushrooms start to soften add the chopped leeks to the pan. Sauté until cooked through and colour has developed.
Step 9
Add the chicken back to the pan. Allow to heat through before you add the heavy cream. Lower the heat to medium (3) and bring to a simmer.
Step 10
Add a handful of spinach and allow it to blanch in the cream sauce. Add a crack or two of black pepper and keep simmering.
Step 11
Once the cream sauce is simmering begin to gradually add in the grated cheddar, stirring constantly to ensure the sauce doesn't break.
Step 12
Let the sauce thicken before cutting the heat. Add the sauce to the pot with the pasta. Mix until evenly distributed.
Step 13
Finely chop chives and add before serving!
