Bean, chickpea and feta salad

Instructions

Step 1
Heat oven to 200C and spread the beans and chickpeas onto a baking tray and season and drizzle over 1 tablespoon oil. Roast for 15 minutes until the beans are lightly charred. Leave to cool.
Step 2
Meanwhile, to make the dressing, in a food processor add the garlic, sundried tomatoes, peppers, chilli and remaining oil and blend until a smooth-ish mixture.
Step 3
Place chickpeas and beans on a platter, sprinkle over the crumbled feta and dot the dressing over randomly.
