Cauliflower and Peas Curry

Instructions

Step 1
Heat oil over high heat (in a wok?). Add cumin seeds and stir briskly for a few seconds. Add onions, garlic, and ginger and fry until golden brown. Add tomatoes and continue frying until a reddish paste. Add the gr. coriander, turmeric, cumin, cayenne, cardamom, and salt. Continue frying until all spices are well incorporated. Add cauliflower and fry well, about 8 min, stirring frequently to prevent sticking to the bottom of the pan.
Step 2
Add the peas, stir and lower heat to med-high. Cover and cook until cauliflower reaches desired tenderness, about 5 min. Off heat, add cilantro before serving.
