Mark's Tarragon Chicken Salad

Amazing chicken salad your family will want again and again. For this recipe I prefer to buy a cooked rotisserie chicken from the local grocery store which keeps this recipe quick and easy. Be sure to use fresh herbs, and not to over-mix the final salad. Also be careful not to chop the chicken too fine. Eat this by itself, on top of a green or arugula salad, or as a sandwich on some fresh sourdough.

1chicken
whole, roasted, pulled and chopped
1 ¼ cuptart apple
small, cored and diced
½ cupcelery
diced
⅓ cupred onion
finely chopped
¾ cupmayonnaise
1 Tbspdijon mustard
2 Tbspfresh tarragon leaves
chopped
1 ½ Tbspfresh italian parsley leaves
chopped
1 ½ Tbspfresh chive
chopped
1 ½ Tbspfresh lemon juice
½ tspfresh ground black pepper
½ tspsea salt
fresh ground
½ cuproasted cashews
roughly chopped
Instructions
Step 1
Combine the chicken, apple, celery, and onions in a bowl.
Step 2
In a small bowl combine the mayonnaise, lemon juice, tarragon, parsley, chives, salt and pepper.
Step 3
Pour dressing over the mixture and stir to combine.
