Instructions

Step 1
Stove top. I usually sauté the onions and bell peppers till just softening.. but optional, add in Rotel, ham, black eye peas, and seasonings. Rice and water. If would like to change flavor or add other seasonings this is the time also, one kid adds more Italian seasoning flavor another adds some Mediterranean twist.. extra garlic is common and extra spice. Mix and simmer till rice is done, stirring occasionally. I also add this to The instant pot and adjust the water amounts to equal or slightly more than the rice. Quick or instant rice can also be used but will tend to lack some flavor. Sometimes we serve with cornbread (poor family days) and everyone adds in tobacco or Siracha etc as desired..
