Instructions
Step 1
PREP: Chop onion and carrot, coarse. Mince garlic and set aside
Step 2
Heat oil in dutch oven. Add onion and carrot. Cook until soft, 5 min. Add garlic, cook 1 min.
Step 3
Stir in broth and tomatoes. Bring to boil, reduce heat, cover and simmer for 15-20 min.
Step 4
Blend in batches, until smooth. Return to pot and season with salt/pepper.
