peeled, pitted and diced

seeded and diced
1mango
peeled, pitted and diced
0.5red bell pepper
core removed and diced
0.5red onion
small, peeled and diced
1 cupshredded red cabbage
½ cupfresh cilantro leaves
chopped, loosely packed
1 tablespoonolive oil
6 ouncesTortilla Chips
Blue Corn
1lime
juice and zest of
4 ouncesMonterrey Jack cheese
freshly-shredded
2 teaspoonscajun seasoning
Instructions
Step 1
Season fish with Cajun seasoning and cook it all the way through
Step 2
Mix remaining ingredients and add fish to the mix
Step 3
Top with shredded monterrey jack cheese or queso fresco
