Family Size Grilled Focaccia Sandwich

A sandwich made for sharing! This one is open to anything you want to add to it, any vegetable goes and you can add a protein so easily. Have fun. Add a salad or some slow fries to the side if you like but in the warmer days I find a good sandwich a satisfying enough meal.

Ingredients
4 servings
1 loaffocaccia
large
8slices of provolone cheese
2tomatoes
slices
2zucchinis
sliced
red onion
Spinach
or arugula, or a mix of both is lovely
Garlic Mayo
Instructions
Step 1
Split 1 large focaccia through the centre to make a top and bottom like an oversized hamburger bun.
Step 2
Heat oven to 350F, place focaccia open faced on a cookie sheet. Heat in the oven for 10 minutes to warm
Step 3
Remove from the oven.
Step 4
Lay 8 slices of provolone onto the bottom slice.
Step 5
Layer tomatoes, salt & pepper, zucchini, red onions, Spring greens. Spread top slice with garlic mayo.
Step 6
Close the sandwich. Give it a good press down firmly all over.
Step 7
A few minutes back in the oven to warm through, melt the cheese and toast up the crust of the focaccia is ideal but optional
Step 8
Cut into serving sized pieces.

MIx everything together. This is great to keep in the fridge for sandwiches, or a dip for pizza crusts and oven fries.
