Instructions
Step 1
1. Dice the sweet potato, cut the broccoli into small florets and cut the corn off the cob. Prepare the instant couscous according to package instructions.

2. Put a pan on the stove over medium heat and add 1 tbsp oil. Add the diced sweet potato and cook ~3-4 minutes. Once browned on the first side, stir and season with some salt, garlic powder, thyme and crushed red pepper.

3. Add the corn to the pan along with 1 tbsp butter. Mix the corn and sweet potato well, add a bit more of the seasonings and cook for ~4 minutes, stirring occasionally.
Step 4
4. Add the broccoli to the pan along with the lemon juice. Cook for ~2-3 minutes, stirring occasionally. Add the vegetable stock and then the spinach and cook for ~1-2 minutes, until the spinach just starts to wilt. Add a touch more seasoning and turn off the heat.
Step 5
5. Grate some parmesan cheese into the finished couscous. Serve the vegetable mixture over the top of the couscous.
