Ingredients
2 servings

2 Tbspvegetable oil

1cinnamon stick

1star anise

2curry leaves

5cloves

3cardamom pods

1onion
halved, sliced

1 tspminced ginger

1 tspminced garlic

1 tspturmeric powder

1 tspmild chilli powder
use regular if you like more spicy

1 tspcumin powder

3 tsproasted curry powder

salt
to taste

black pepper
to taste

6plums
South African, halved, seeded, sliced

1chicken fillet
cut into cubes

300mlchicken stock
or vegetable stock, or water

1 bunchcoriander
To serve:
Instructions
Step 1

Preheat vegetable oil in a large pan.
Step 2

Add cinnamon stick, star anise, curry leaves, cloves, and cardamom pods. Fry on Med-low heat for 1-2 minutes.
Step 3

Add sliced onion and cook until tender, stirring constantly (@ 3 minutes.)
Step 4

Add minced garlic and ginger, mix well. Cook for a further 2 minutes.
Step 5

Add turmeric powder, mild chilli powder, cumin powder, roasted curry powder, salt and black pepper.
Step 6

Mix well and let cook for a few minutes (you may need to add a bit of water or stock if the mixture is too dry.)
Step 7

Meanwhile, slice plums. Save two of them for later and add the rest to your onion mixture. Mix well.
Step 8

Add cubed chicken.
Step 9

Give it a good mix and pour in chicken/vegetable stock or water.
Step 10

Cook covered for 40 minutes on low heat.
Step 11

Add the rest of your sliced plums and coriander, cover with lid and cook for additional 10 minutes.
Step 12

To serve, cut off the top of the bread and remove 80% of the ‘bread guts’ (haha)
Step 13

Fill the hollowed loaf with your plum and chicken curry mixture, adding more coriander. OR, serve over rice - your choice!
