Step 1
Mandolin onions super thin
Step 2
In a large pan, add olive oil to coat and bring to medium low heat. Add your onions and caramelize on low heat, stirring occasionally until golden brown, around 20 minutes. Salt as you go.
Step 3
While your onions cook, blend the chipotles in adobo until very smooth.
Step 4
In a bowl, mix the apple cider vinegar, honey and 2 spoonfulls of chipotle mix.
Step 5
Once the onions are browned, add the apple cider vinegar mix and stir into onions. Cook for another 5 minutes until the mix is reduced and well flavored into the onions.
