Instructions

Step 1
On a clean surface, pile your semolina flour and make a well in the middle.
Step 2
Little by little, add water, a pinch of salt and use a fork to bring the flour in from the outside.
Step 3
When you see that the dough is starting to take shape, knead it with your hands for 10 mins.
Step 4
Cover your dough with a plate or cling film and let it rest (out of the fridge) for 30 mins.
Step 5
Cut your dough into 4 pieces and roll out each piece to form a sausage (1cm thick).
Step 6
Cut each your “sausage” into small pieces (1 cm each).
Step 7
Now drag each little dough piece with a knife towards you so it curls round the knife.
Step 8
Push your thumb inside and turn it inside out.
Step 9
After you made all your orecchiette, boil them for a couple of mins in some salted water.
Step 10
Serve your orecchiette with your favourite sauce.
