Ingredients

2 Tbscider vinegar

1 Tbsdijon mustard
or brown

1 Tbsextra virgin olive oil

1garlic clove

¾ tspsalt

¾ tspground pepper
fresh

1 lbsred potatoes
small, scrubbed and halved

1red onion
large, 1/2 inch wedges

1 Tbsfresh rosemary
chopped

12 ozchicken sausage
fully cooked

10 ozfrozen peas
thawed

1yellow bell pepper

10kalamata olives
pitted and chopped

¼ cupflat leaf parsley
chopped

3 Tbsgoat cheese crumbled
Instructions
Step 1
Preheat oven to 425. Spray nonstick roasting pan with nonstick spray
Step 2
Dressing: whisk vinegar, mustard, oil, garlic, 1/4 tsp salt, and 1/4 tsp pepper in a small bowl until blended. Set aside.
Step 3
Combine potatoes, onion, rosemary, and the remaining 1/2 tsp salt & 1/2 tsp pepper in a large bowl. Lightly spray the potato mixture with olive-oil nonstick spray; toss to coat. Arrange the potato mixture in the roasting pan in one layer. Roast, stirring occasionally until the potatoes are browned and tender (about 40 minutes). Transfer to a large bowl. Set aside.
Step 4
Spray a large nonstick skillet with nonstick spray, set over medium heat. Add sausage and cook, covered, until lightly brown and heated through (about 7 minutes). When the sausage is cool enough, cut into 1" pieces; add potatoes.
Step 5
Add peas, bell pepper, olives and parsley to the potato mixture. Drizzle with dressing and toss well to coat. Sprinkle goat cheese and serve at once.
