Ingredients
4 servings
1 lbchicken thighs
or breast chopped into 1 in chunks
2stalks celery
diced
0.5onion
diced
3 Tbspcoconut oil
or fat of choice
2 Tbspitalian seasoning
1 tspsea salt
plus more to taste
0.25 CupCassava Flour
8 ozfull fat coconut milk
2 cupswater
1 Tbsponion
dried, minced
1 tspgarlic powder
5 cupcauliflower rice
1 Tbspbalsamic vinegar
Instructions
Step 1
Preheat oven to 325F.
Step 2
In a bowl, mix together the chicken, 1/3 of the coconut oil, 1/2 of the Italian seasoning and salt to taste.
Step 3
Heat the remaining oil in a saucepan over medium heat. Add onion and celery and sauté until beginning to soften. Once onion is translucent, sprinkle the flour and continuously stir for about two minutes.
Step 4
Slowly whisk in coconut milk and water to make a thick sauce. Let simmer for 8-10 minutes.
Step 5
Meanwhile, m together in a small bowl.
Step 6
In a baking dish, combine the cauliflower rice, minced onion, garlic powder, the remaining Italian seasoning, salt, and sauce. Add chicken and balsamic vinegar and mix to combine.
Step 7
Cover and bake for 35-45 minutes, until rice and chicken are cooked through. Serve hot and enjoy!
