Instructions
Step 1
1. 10min low temperature fry onions and potatoes (X3 large pots and X1 large onion)... Can chuck in garlic as well.
Step 2
2. At same time have some veg stock boiling (use cubes) enough stock to cover the veggies.
Step 3
3. Put half stock in pan with potatoes and onion simmer for 10 mins.

4. Add frozen peas (Petit best as sweeter). Bring back to boil
Step 5
5. Add spinach and rest of stock. Should be all wet and ready to blend after 2ish mins (can add handful of basil at this point if you want). Salt and pepper to taste
Step 6
6. For extra "zing" think of adding yoghurt mixed with something like mint or coriander or wild garlic leaves (loads of that around Lincoln) &/or sliced up chilli
