Ingredients
4 servings
2 tablespoonsoil
0.5sweet onion
diced
2carrots
large, Sliced into 1/4 inch coins
1whole garlic
crush and minced
6 ouncestomato paste
½ teaspoonsazon
homemade, instructions in menu
1can red beans
or vegetarian beans, drained
4 cupswater
1 cupbrown rice
or white or whatever rice ..whatever who cares
salt
to taste
brown sugar
to balance out acidity, optional
Instructions
Step 1
Heat oil in a pot over medium heat. Sauté onions. (SAUTÉED ONIONS RECIPE IN MENU)
Step 2
Add carrots, garlic, tomato paste, and sazon to the pot. Mix well and cook for 1 minute.
Step 3
Next, add the water and rice. Mix well.
Step 4
Increase heat to high and bring everything to a boil. Once at a boil, lower temperature to low. Cover pot with a lid. Simmer and cook for 40 minutes.
Step 5
Add beans and stir everything together.
Step 6
Cook for an additional 5 minutes. Add a pinch of salt and sugar (optional) to taste.
Step 7
Serve. ENJOY!
