Sun-Dried Tomato and Lemon Pasta

Instructions

Step 1
Add oil to a large pan and cook the shallots until soft and translucent.
Step 2
Add your Italian seasoning, dried basil, lemon zest and chilli flakes to the pan and cook until fragrant.
Step 3
Add your cream and when it starts to bubble, add your spinach and parmesan and season with salt and pepper.
Step 4
Meanwhile, cook your pasta until al dente.
Step 5
Add your pasta, along with some pasta water, to your pan and stir until fully coated.
Step 6
Finally, place your ball of burrata cheese on top and break open. Garnish with more lemon zest and enjoy!
