GARLIC PUMPKIN PASTA 🍝
Pumpkin season is here and you can use them for so much more than just soup such as this delicious pasta! 😋

RECIPE (4 servings, 35min prep time):
-1 butternut squash or your favorite pumpkin, halved and seeds removed
-1 head of garlic
Drizzle with oil and roast at 180C/360F for 25mins.
Then scoop out the flesh and squeeze the roasted garlic in a blender.
-2 cups (500ml) water or plant milk
-salt to taste
-2 Tsp paprika
-1 Tsp chili powder
-juice of 1/2 lemon
Blend until smooth
-375g pasta
Boil until al dente.
Mix pasta, the sauce and some pasta water, serve.
