Instructions
Step 1
Place chicken into a bowl, add fajita seasoning and oil, mix well to make sure all chicken pieces are coated. Let marinade for a minimum of 30 minutes.
Step 2
Cut the peppers and onions into thin strips. Add 2 tablespoons of vegetable oil in a cast iron skillet (or any frying pan works). Once oil is hot, add peppers and onions and saute for 3 - 4 minutes, stirring occasionally. Then, remove vegetables from pan and set aside.
Step 3
Place the chicken in the cast iron in a single layer over medium heat and cook for 4 - 5 minutes on each side or until cooked.
Step 4
Remove the chicken from pan and slice.
Step 5
Return chicken, peppers, and onions to the cast iron. Mix well!
Step 6
Serve with tortillas, guacamole, beans, corn, Mexican rice, salsas, cilantro, and lime.
