Instructions
Step 1
Cut chicken feet nails and put them in a pot of water with cooking wine, sliced ginger, Szechuan peppercorn and scallion, bring to boil for 5-10 minutes; Remove from the heat to cook off.
Step 2
Heat up cooking oil in a Dutch oven pan, add in sliced ginger and garlic to stir fry, further add in sugar to stir for a minute. Then put chicken feet in the pan to stir.
Step 3
Add in the bay leaves, star anise, dried chili, dark soy sauce, light soy sauce, dark vinegar, oyster sauce to mix for a couple of minutes. Pour in water and bring the broth to boil for about 1 hour.
Step 4
Shut off the heat and soak the chicken feet in the broth for another hour. It’s ready to serve.
