White Chocolate Chickpea Baked Oats

Vegan baked oats with an ingredient you never saw coming. Tastes like a giant white chocolate chip cookie and will definitely be one of your new favorite breakfasts!

Ingredients
1 servings
⅔ cuprolled oats
½ cupcanned chickpeas
rinsed and drained
1 Tbsplight brown sugar
use 2 tbsp if you like it sweet or are not using the chocolate chips
1 Tbsppeanut butter
or any nut butter
½ tspcinnamon
½ tspbaking powder
1 pinchsalt
½ cupplant based milk
2 Tbspwhite chocolate chips
1 Tbspchopped macadamia nuts
Instructions
Step 1
Preheat the oven to 350F.

In a small blender, add the oats, chickpeas, brown sugar, peanut butter, cinnamon, baking powder, salt and almond milk.
Step 3
Blend until smooth, about 20-30 seconds.

Pour into a small baking dish (I use a 7' mini pie dish, but it's really up to you) and top with the chocolate chips and nuts.

Bake for 18-22 minutes or until the top looks cracked. Serve warm!
