Teff and lupin flour are very nutritious high protein and high fiber teff flour contains essential amino acids so these make a great healthy flour alternative in your pancakes . They are naturally gluten free but always check the packaging to make sure it says gluten free on it

Step 1
In a large bowl mix teff flour lupin flour baking powder and salt together to combine

lupin flour½ cup
baking powder¾ tsp
salt

In a separate bowl beat eggs vanilla and maple syrup ( or liquid sweetener ) together until the eggs are pale and fluffy then add the almond milk and gently stir in

Step 3
Mix the wet ingredients into the dry ingredients until just combined don’t over mix . The batter can be baked in a sheet pan in a cupcake tray or in a round burger mold . Pour batter two thirds full into each mold then sprinkle semi sweet chocolate chips on top . Bake at 200c / 400 f fan setting for 12 minutes . Serve and enjoy
