Instructions

Step 1
1. Preheat the oven to 350F and line a baking sheet with parchment Set aside.

2. Take the eggs and separate the whites from the yolks and keep the yolks for later. Take the whites and whip them for a solid 2 mins until peaked.

3. Take the hot water (make sure it’s the hottest temp you can get out of the faucet but NOT boiling) and pour it into the dry ingredients and use damp hands to mix it all together. Form a ball and let it sit for 5 mins. This gives it time to soak up the water. The dough will be almost kinetic sand texture.

4. Then add the egg whites and SLOWLY mix them into the dough. Do not over mix you want to mix only until the egg whites are mostly mixed in and can’t be seen on the dough as white specs.
Step 5
5. Take the dough and divide it into 8 equal-sized balls and form your bagels.
Step 6
6. Bake the bagels for 25 mins. Then take the egg yolk and brush the tops of the bagel with it and sprinkle with everything bagel seasoning and return them to the oven for 3 mins on the lowest rack.
