Instructions
Step 1
Preheat the oven to 400F (200C).
Step 2
Slice the aubergine lengthwise, about 1/4-1/3 inches thick.
Step 3
Rub 1 tbsp. olive oil on each side of the eggplant slices and place it on a baking tray lined with baking paper – season with salt and pepper.
Step 4
Place in the oven for about 10 minutes.
Step 5
Meanwhile, grab a pan, and heat the remaining 1/2 tbsp. olive oil
Step 6
Add in the garlic and onion, and sauté for about 3-4 minutes, until soft – season with salt and pepper.
Step 7
Next, add in the tomato puree and spinach and cook for another 1-2 minutes until the spinach has wilted.
Step 8
Remove the aubergine slices from the oven, and top each with the tomato sauce mixture.
Step 9
Sprinkle with grated cheese and oregano.
Step 10
Place in the oven for another 5 minutes, or until the cheese has melted.
Step 11
Serve immediately.
