Ingredients
4 servings
1 cupyellow mung beans
split
4 cupswater
or broth
1 tablespoonfall spice mix
1 tspturmeric powder
3 ozbaby spinach
roughly chopped
½ teaspoonsalt

Instructions
Step 1
Soak the split mung beans in water for at least 3 hours or overnight. Rinse the mung beans until the water runs clear.
Step 2
In a large saucepan bring the 4 cups of water or broth to a boil over high heat
Step 3
Add the mung beans spice mix and turmeric to the saucepan and bring back to a boil uncovered
Step 4
Turn the heat down to medium and simmer without stirring partially covered for 20 minutes. At least 30 minutes if you did not soak the mung beans 1st.
Step 5
Stir in the chop spinach until it wilts. add salt
Step 6
Serve in 4 bowls over Brown or white basmati rice or with everyday dosa.
Step 7
Garnish each serving with one tsp melted Ghee
