Instructions
Step 1
Put 1 Tablespoon oil (unnecessary for cast iron) on a griddle over medium heat. When hot, put a tortilla on the griddle. Top with cheese, salsa, and another tortilla. Cook until cheese melts, ~2 minutes. Turn and cook until cheese is melted and both sides toasted, 2-3 minutes. Drain if necessary. Cut into wedges if necessary. Serve.
Step 2
VARIATIONS: Add minced onions or peppers, cooked meat, jarred red pepper, or cilantro. Put on one side of tortilla, fold in half after 2 minutes, and turn.
