2 Tbspbacon fat
3 Tbspflour
2 qtchicken broth
3 stripsbacon
2onions
large, finely chopped
2cloves garlic
crushed
1green pepper
small, minced
3 cupsokra
chopped
4bay leaves
2 lbsraw shrimp
cleaned
1 lbcrabmeat
1 ptoysters
1 tspsalt
1 tsppepper
1 dashhot sauce
1 dashcayenne pepper
1 dashworcestershire sauce
1can peeled tomatoes

Instructions
Step 1
make a roux by browning flour in bacon fat
Step 2
add broth stir to prevent lumping and set aside to be used later
Step 3
fry bacon and add chopped vegetables and tomatoes without juice
Step 4
cook covered, until onion is golden brown
Step 5
add roux to this mixture tomatoes and all seasonings
Step 6
cook gumbo slowly and watch for 2 hours
Step 7
about 30 minutes before serving add seafood and additional salt if needed simmer slowly
Step 8
gumbo will become darker upon addition of seafood
Step 9
serve hot over a mound of cooked rice
