Instructions

Step 1
Preheat the oven to 400
Step 2
Lightly beat eggs and combine with ricotta (or cottage) cheese, Italian seasoning and half the mozzarella.
Step 3
In a 9x13 pan, cover the bottom with some of the spaghetti sauce. (About 1/4 of the jar) Layer 2 matzahs. It's ok if they install overlap
Step 4
Add 1/3 of the ricotta mixture. You may add a layer of cooked vegetables here, if you like.
Step 5
Top with a layer of mozzarella and add a layer of sauce (1/4 of the jar)
Step 6
Add 2 more matzahs, another 1/3 of the mixture, veggies, if using and 1/4 of the sauce and another layer of matzah. Repeat
Step 7
After the final layer of matzah, add the remaining sauce and mozzarella, as desired.
Step 8
Bake for about 30 minutes. If cheese begins to brown too early, cover and continue. Otherwise, bake until cheese melts and is bubbly and brown.
