Instructions
Step 1
Place the onion, garlic, chorizo and olive oil in a large pan over a medium heat. Cook for about 5 mins until the onion is soft and the chorizo has released its juices
Step 2
Add the chopped tomatoes, oregano and sugar and cook until the sauce is rich and has reduced by at least two-thirds. Taste and add salt if needed
Step 3
Meanwhile, cook the pasta and add to the sauce
Step 4
Add 100ml of the pasta cooking water to the sauce (only if sauce looks dry)
