Instructions

Step 1
Brown the brisket (or chuck/short ribs) in a cast iron pan. Then remove.
Step 2
Add some olive oil and cook the carrot, celery and onion. After a few minutes, add the garlic and tomato paste.
Step 3
Add the wine and let simmer. Add in the tinned tomatoes, beef, spices and stock.
Step 4
Let simmer for 3-4 hours. Just before serving, shred the beef and re-add to the sauce. Serve with pasta. PRESSURE COOKER If using a pressure cooker, add everything to the pot and cook for 1 hour. Stir in the pasta and serve.
