Taro with Sumac, (القلقاس البلدي المقلي)

Instructions

Step 1
Peel the taro, chop medium-sized cubes, and wash it with cold water.
Step 2
Put 2 cups of water in a pot on the stove with a little salt. Boil it then add the taro and leave it for 10 to 15 minutes or until it becomes tender.
Step 3
Take the taro out of the pot and wash it with cold water, then drain it.
Step 4
In a large skillet, Put the vegetable oil on the stove to warm, then fry the taro pieces until gets light brown color, then put it in a colander and drain the oil.
Step 5
While we are frying the taro, we prepare the sumac mixture by grating finely the onion and and garlic, then add sumac and salt to it, then fry it and stir to mix well, then Add 1 cup of water and stir it for 2 minutes.
Step 6
After the taro has been drained from the oil, put it while it is still hot on the sumac mixture and stir until the taro absorb the sumac water, onion and garlic.
Step 7
In a serving bowl, place taro and garnish with spring onion or a pinch of mint or parsley.
Step 8
8- Serve it hot with green salad aside.
