Instructions

Step 1
In a bowl, combine the pork mince, sage, sugar, salt and pepper. Mix thoroughly.
Step 2
Roll the pork mixture into a ball. Using a sheet of greaseproof paper, flatten the mince into a thin, circular patty, slightly bigger than the size of an English muffin. Cover and place in the coldest part of the fridge for 1-2 hours. Alternatively, prepare the sausage patty the night before and leave in the fridge overnight, ready to be cooked in the morning.
Step 3
Heat a little oil in a frying pan over a low-medium heat. Place the sausage patty into the pan and cook for around 3 minutes per side, or until cooked through and golden.
Step 4
Drain any excess oil and remove the sausage from the pan. Serve with pancakes and scrambled eggs as part of a 'big breakfast', or as part of a sausage and egg muffin.
