Instructions

Step 1
Prep the shrimp: Pat shrimp dry and arrange flat on a sheet pan. Toss with oil, garlic, and spices. Squeeze lime juice on top.
Step 2
Rice: cook rice per package instructions. When rice is finished, add a sprinkle of salt, half a lime’s worth of juice, and cilantro. Maybe some butter if you’re feeling crazy.
Step 3
Corn: wrap ears of corn in foil and cook in oven with shrimp for 10-15 mins at 400°.
Step 4
Make crema: Mix sour cream, Mayo, lime juice, garlic in a bowl. Set aside.
Step 5
Once corn is finished cooking, take it out, unwrap it, and brush on the crema mixture. Sprinkle Cojita and chili powder on top. Return to oven.
Step 6
Broil corn & shrimp for 5 mins or until charred. Sprinkle cilantro over corn once it’s done.
Step 7
Serve with avocado, leftover crema, hot sauce, and lime wedges.
