Instructions
Step 1
In a pot, add milk and butter and bring to a boil.
Step 2
Add flour and a pinch of salt and stir with a wooden spoon for a couple of mins or until you form a dough.
Step 3
Remove from the stove and let it cool down for 30 mins.
Step 4
Now, spread some flour on a clean surface then roll out your dough with a rolling pin until you have a thin sheet (2-3mm thick).
Step 5
Use a round pastry cutter with a diameter of 12-14 cm (you can also use a glass) and cut your dough into disks (this recipe makes approximately 12 Sofficini).
Step 6
In the meantime, in a bowl mix your grated mozzarella with bechamel sauce, then add a spoon of your bechamel/ mozzarella at the centre of each disk along with some ham, previously diced.
Step 7
Use your finger to spread some water on the edges of your disk, then close it in half.
Step 8
Press the edges down with your finger and use a fork to seal them properly.
Step 9
Coat your Sofficini with eggs and breadcrumbs and fry in hot sunflower oil for about 3 mins each side or until golden!
Step 10
Serve with some fresh salad (traditionally cherry tomatoes and rocket). Buon appetito!
