Instructions
Step 1
Dice onion, carrot, celery into 1/2" pieces
Step 2
Wash lentils
Step 3
Heat oil in deep pot on medium heat
Step 4
Stir in onion for 1 min
Step 5
Add carrot and celery, cook until bright, ~2 min
Step 6
Add lentils, bay leaf, water, salt and pepper
Step 7
Bring to a boil, then simmer 30 min until lentils are done
Step 8
Add lemon juice, dill, salt, and pepper
