Honey-Orange Mashed Sweet Potatoes
Bright flavors for the dead of winter. I usually microwave the sweet potatoes and skip the honey in favor of spices like cardamom, ginger, nutmeg and the like. Or you can go with fiery spices like cayenne, which I do if it's just me ;)

Instructions
Step 1
Place potatoes into large pot and fill with enough water to cover. Bring to a boil and cook until tender.
Step 2
Drain well.
Step 3
Add 1/4 to 1/2 cup orange juice, and 1/4 tsp. of orange zest, Mrs Dash, honey, olive oil, and pepper to potatoes and mash until smooth.
Step 4
Adjust seasoning. Serve piping hot.
