Linguine with White Bean Puttanesca

Puttanesca (poot-tah-NEHS-kah) is a classic spicy Italian sauce that contains tomatoes, capers, olives, and usually anchovies. If you're a fan of the latter, add up to 6 chopped fillets to your portion with the parsley.

1 tablespoonolive oil

1onion
chopped

3garlic cloves

1 teaspoondried oregano

¼ teaspooncrushed red pepper

1 x 14.5 ouncecan diced tomatoes

12pimento-stuffed olives
sliced

1 tablespoondrained capers
chopped

15.5 ouncecan white beans
small, rinsed and drained

¼ teaspoonsalt

2 tablespoonsparsley
chopped
Instructions
Step 1
Cook the linguine according to package directions, omitting salt if desired; drain and place in a large bowl.
Step 2
Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, oregano, and crushed red pepper; cook, stirring occasionally, until the onion softens, 2-3 minutes. Stir in the tomatoes, olives, and capers; simmer, stirring occasionally, until the sauce thickens, 6-7 minutes. Add the beans and salt; cook until heated through, about 1 minute.
Step 3
Pour the beans and sauce over the linguine, sprinkle with the parsley, and serve at once.
