Lemony Blueberry Muffin Recipe
Lemony muffins stuffed with blueberry goodness that are not too sweet nor disgustingly greasy! Actually good to eat and easy to make!

1 tsplemon juice

⅓ cupwater

3 cupsall purpose flour
whisk the flour then lightly scoop into the measuring cup

1 Tbspbaking powder

¼ cupsalted butter
softened

¼ cupoil
I always use olive oil, but a more plain oil can be used

2eggs
large

¾ cupgranulated sugar
I use the lower amount, but if you prefer a more sweet muffin you can use the higher quantity

2 Tbsplemon juice
or 1 tsp lemon zest or 1/2 tsp lemon extract

½ cupplain Greek yogurt
+ 1 Tbsp, regular, not low fat

½ cupsour cream
+ 1 Tbsp, regular, not low fat

1 ½ cupblueberries
fresh or frozen, not sweetened
