3Persian cucumber
finely diced

1 ccherry tomatoes
halved

2 carugula
roughly chopped

parsley
finely chopped

0.25red onion
finely diced

1avocado
cubed

⅓ croasted nuts

2 ozcrumbled feta

¼ colive oil

1lemon
zest and juice

1 heaping tspyellow mustard
or Dijon

1garlic cloves
finely minced

1 Tbsporegano
finely chopped

1 tspaleppo pepper

Instructions
Salad
Step 1
Put cauliflower in food processor (It should be like snow)
Step 2
Mix cauliflower and the diced cucumbers, tomatoes, arugula, parsley, red onion, and avocado together in a bowel
Step 3
Toast nuts. Top salad with the nuts and the feta cheese.
Dressing
Step 4
In a mason jar or blender, combine olive oil, lemon juice and zest, mustard, garlic, oregano, Aleppo pepper, and a couple punches of salt and pepper. Shake and season to taste.
